LA MONTANA — COSTA RICA
This coffee is from the San Marcos region of Tarrazú, Costa Rica. Like most farms here, this is a family project. The Gutierrez family produces their harvest at between 1500 and 1900 meters altitude, mostly of the Caturra and Catuai variety, which are very resistant against harsh environmental circumstances and on top have excellent cupping behavior. The coffee is processed as fully washed - the same day as the coffee is harvested it is moved to the micro mill where the mucilage is 100% removed mechanically, then the coffee is brought to the drying patios where to be constantly in motion every hour during the day. It is dried for approximately 15 days.
